Dr. Syahariza Zainul Abidin

Dr. Syahariza Zainul Abidin is a Senior Lecturer in Food Technology at Universiti Sains Malaysia. She holds a Master’s degree in Food Chemistry and Biochemistry from Universiti Putra Malaysia and a Ph.D. in Food Science from the University of Queensland, Australia, with a specialization in starch structure–function properties.
Her research interests include starch modification, food biopolymers, and the development of texture-modified foods for the elderly and individuals with dysphagia. She also has expertise in food chemistry and advanced instrumental analysis, contributing to a deeper understanding of starch functionality and its applications in the development of innovative food products.
In addition to her academic and research work, Dr. Syahariza is actively involved in community engagement. She has led a project funded by the Ministry of Finance Malaysia under the social entrepreneurship initiative Projek Pembangunan Produk Rambutan, which aims to support the B40 community by reducing post-harvest losses, extending shelf life, and creating new market opportunities. Through her work, she strives to integrate scientific innovation with practical solutions that benefit both industry and society.
